Baked Egg

An easy and quick breakfast.

Ingredients
  • Six (6) slices of ham
  • Six (6) raw eggs
  • Half (1/2) shredded cheddar cheese
  • One (1) tablespoon chopped chives
  • cooking spray, salt and pepper
Method

Preheat oven to 350.
Spray six cups of a muffin tin with cooking spray.
Arrange ham slices to they line the muffin cup completely, edges will stick cup above the cup.
Bake for ten (10) minutes.
Remove from oven and break an egg into each cup, gently breaking yolk.
Sprinkle salt and pepper.
Return to oven for another ten (10) minutes.
Check eggs, if they are done to your liking remove and scatter with cheese and chives.
Serve immediately for six (6) servings.

French Toast

Ingredients

  • Two slices of whole wheat bread
  • Half (1/2) cup egg beaters
  • Quarter (1/4) cup of milk
  • Half (1/2) cup egg beaters
  • One teaspoon splenda
  • One teaspoon vanilla extract
  • One teaspoon cinnamon

Directions

  1. Mix all ingredients in a bowl (except bread)
  2. Dip each piece of bread on each side into mixture
  3. Coat pan with non-sticky spray & turn stove on medium or low heat.
  4. Place in pan for 3-4 minutes on each side.
  5. It’s ready to serve.
